Kildrummy Castle Hotel a stately Victorian mansion was built as a private residence around 1900 and is reckoned to be one of Scotland's finest country houses. It stands in acres of gardens in the heart of the Grampian Highlands overlooking the original thirteenth-century castle.
The sweeping driveway delivers you to the stunning hotel entrance where inside it feels distinctly baronial and the cooking is in tune with the setting. The kitchen tips its hat to the Auld Alliance with a mix of traditional Scottish and French dishes in the classical style. On the one hand you might find wild boar prosciutto, dry-cured wild boar served with fried Brie, drizzled with Honey or pan-fried fillet of Aberdeen Angus beef with haggis and Drambuie sauce; on the other, expect Gallic flourishes like 'voice of the sea' a rich fish soup finished with brandy or pigeon breast on a bed of onions, carrots, cinnamon, and raisins wrapped in filo pastry and served with a balsamic reduction.
