Review on The Cavendish Hotel, Gallery Restaurant
Situated on the northern fringes of Chatsworth Estate, this privately run hotel is an eminently civilised, comfortable retreat for visitors to the Peak District. The aptly named Gallery Restaurant is festooned with the owner's eclectic art collection: fascinating canvases blend happily with muted blue and yellow colour schemes, soft lights, fresh flowers and - of course - fine views of the Estate.
Exciting modern flavours and contrasts are the hallmarks of the food, and Derbyshire produce gets a good airing. A Pithivier of calf's sweetbreads with a warm salad of ceps could precede best end of Castlegate lamb with red onions, garlic, thyme and black raisin sauce or char-grilled sea bass with a crab and sweetcorn spring roll, greens and tamarind dressing. Desserts might include maple-roasted pineapple with coconut ice cream, and the well chosen 80-bin wine list is helpfully organised by style ('full bodied and oak-influenced whites', for example).
'Chef's tables' are all the rage these days, but the Cavendish has been operating its own 'kitchen table for two' for more than 20 years. Informal food is also available in the Garden Room (10.00am - 10.00pm), where the menu divides up into British, French, Italian and Thai.
