Review on Bordeaux Quay

If you're not familiar with the term 'eco-gastronomy', the chances are you soon will be – especially if you take a trip to Bristol. Green crusader, Barny Haughton (who runs Quartier Vert in the city), has upped his game and transformed a converted warehouse on Bristol's dockside into an eco-friendly complex incorporating a restaurant, brasserie, bakery and deli.

From the way the loos flush to the extraction system in the kitchen, everything about this revolutionary new venue has been scrupulously planned and designed to take account of energy consumption, food miles, water, waste and sustainability.

The main action happens on the open-plan ground floor of the vast glass-fronted building. This is the informal side to the project – an all-day bar, deli and brasserie serving Haughton's trademark Euro dishes based on organic West Country produce (Italian fish stew, courgette and Ricotta tart with rocket salad, pork and veal sausages with mash and chard

Venture upstairs to the restaurant and you'll find something rather different: here the menu promises things like risotto of chanterelles, spinach and Pecorino, roast sea bass with new season's leeks and beurre rouge or marinated rump of lamb with braised lentils, turnips, purple sprouting and coriander. To finish, try damson crème brûlée or Bramley apple tart with Chantilly cream and wild blackberry syrup. Organics loom large on the wine list (which offers everything by the glass), and there's a catholic choice of beers, lagers and ciders, too.

Bordeaux Quay also offer courses, classes and workshops enabling you to learn more about food and wine in a hand-on-way, and offer everything from relaxed evening classes and wine tastings to more focused certificate courses.
