An open-to-view, glass-fronted kitchen allows guests to watch the chefs beavering away at Quadrato, a chic, contemporary restaurant attached to the high-flying Four Seasons Hotel which also boasts a spectacular riverfront setting.
Seasonal menus and weekly specials with a strong North Italian accent are the order of the day. Typically, expect Burrata Mozzarella with Inca tomatoes and gazpacho sauce, followed by homemade pasta in the shape of - say - sea bass and courgette ravioli with lobster bisque and smoked Ricotta. Main courses could include roast quail filled with Luganica sausage and black truffle risotto Mantecato, while desserts range from vanilla and pink pepper pannacotta to caramel mille-feuille with poached pear.
On Saturdays, there are special 'Oceano' evenings devoted to fresh seafood and live jazz; come Sunday, the prospect of an authentic Tuscan brunch attracts the crowds who come to feast on terrines, cheeses, breads, roasts and creative desserts.
