Review on Cavan Crystal Hotel, Opus One
Situated cheek-by-jowl with the Cavan Crystal factory and shop, this purpose-built modern hotel is now the focal point of the area: it boasts excellent business and leisure facilities, and guests also have the opportunity to tour the site.
The hotel itself is dominated by a vast three-storey atrium, which also houses a popular bar. On the first floor, just off the foyer, is the stylish Opus One restaurant - an impressive room with handcrafted brick, native Irish wood and crystal chandeliers (of course!).
Ambitious contemporary food is the order of the day - especially in the evening, when the kitchen sends out starters of baked goats' cheese and pumpkin tart with white onion mousseline and beetroot ice or duck confit with squash and veal jus ahead of cannon of lamb on creamed cabbage or roulade of chicken with Stilton and pear stuffing. The attractively priced wine list offers a fine selection from the Old and New Worlds.
