Review on Cleaver East by Oliver Dunne
Cleaver East is the showpiece restaurant of the Clarence Hotel, located in Dublin's Temple Bar overlooking the River Liffey. Before they were famous, rock superstars Bono and The Edge from U2 used to hang out at the Clarence. They had fond recollections and loved the place so much that they eventually bought it (with a little help from some investors). That was in 1992. Since then, the grand old 1850s hotel now owned by Brushfield Ltd, became the coolest spot in town.
The restaurant is the brainchild of Michelin starred chef Oliver Dunne of Bon Appetit in Malahide and he has appointed talented chef Rory Carville, formerly of Lock's Brasserie where he earned a Michelin star in 2013 to take the helm of the kitchen. The restaurant has its own entrance on East Essex Street and the high-vaulted dining room, formerly the Tea Room has been transformed with the introduction of an island cocktail bar and images of Oliver and Rory clutching cleavers and a pigs head.
Impeccable ingredients are carefully sourced for the a la carte menu that features 'Beef Cuts @ Cleaver East', with five of the best beef cuts from around the world or alternatively there's a 6 Course Surprise Tasting Menu on offer. Kick off with a starter of homemade rare breed beef sausage with potato purée and plum jus or Dublin Bay prawn dumplings, oriental mushrooms and lemon grass broth. Follow on with pan fried hake with a clam, celeriac, carrot, saffron velouté and crushed dill potatoes or meat lovers might opt for the cutlet of Wicklow lamb with crispy lamb breast, garlic purée, crushed swede and rosemary aioli. Tempting desserts close proceedings with a passion fruit panna cotta, honeycomb, pineapple and mint salad or the Cleaver East tiramisu, chocolate and almond crumb and espresso gel.
To complement the menu there's a well thought out wine list, classic cocktails, as well as Irish and International craft beers.
