The revamped fine-dining restaurant named Wilde (formerly the Russell Room) is the first choice for top-end meals: it's a lively, stylish and thoroughly contemporary rendezvous with big picture windows and modern artwork on pale yellow walls.
The kitchen delivers accomplished, sharp modern food to match the setting using carefully sourced seasonal ingredients. Artisan Irish produce gets top billing, and the menu is strong on grills from certified Black Angus beef, although the repertoire also spans everything from seared wild sea bass with creamed leeks and chorizo to caramelised beetroot risotto with baby spinach, feta and pea shoots.
