Review on The Brasserie at Norton House

Once owned by John Usher of the famous Scottish brewing family, this grand Victorian mansion became a hotel in 1951. It still retains much of its original grandeur, with an elaborate Renaissance-style porch, marble pillars and an oak-panelled staircase leading to a gallery above the entrance hall.

The kitchen draws on supplies from local farms, estates, orchards and fisheries for a contemporary repertoire of dishes ranging from smoked salmon terrine with beetroot sorbet to chocolate tortellini. Beef from short-horned Angus Galloway beasts is a regular feature, while Dornoch lamb might appear with parsnip and vanilla ice cream and rosemary jus.
