Ynyshir Restaurant and Rooms, formerly known as Ynyshir Hall, once owned by Queen Victoria, a glorious one-time shooting lodge is set in 14 acres of heavenly gardens ablaze with horticultural gems – not just the expected rhododendrons and azaleas, but all manner of rare and exotic trees and shrubs. It also stands enviably close to the Dovey Estuary, with a vast RSPB Nature Reserve just a ramble away. What more could you ask?
Ynyshir is owned by John and Jenny Talbot together with business partners chef patron Gareth Ward and his partner Amelia Eiriksson, general manager of the restaurant. Gareth's cooking has seen the restaurant awarded a prestigious Michelin star, as well as being the only establishment in Wales to hold four AA rosettes.
The kitchen puts its faith in top-drawer local and seasonal ingredients: crabs, lobsters and shrimps from Cardigan Bay, wild salmon and venison, organic pork, free-range chicken, Welsh mountain lamb and farmhouse cheeses – not forgetting a harvest festival of produce from the hotel's kitchen garden and pickings from the wild. The wine list is a majestic 300-bin tome knowledgeably garnered from all corners of the world.
