Review on Gasthof Rössli
Gasthof Rössli is a Michelin starred restaurant in the town of Escholzmatt in the canton of Lucerne, Switzerland. It is run by an accomplished husband and wife team Stefan and Monika Wiesner-Auretto, he is in charge of the kitchen, while she looks after the well-pitched service. Stefan is experimental when it comes to his cooking, many ingredients are gathered from his foraging expeditions, he boils stones, smokes snow and uses it for his soup, he cooks with moss and gold, and covers ant hills with a chiffon to extract formic acid for his marinades.
There is no menu in this restaurant, rather diners are asked to choose five or six dishes and their culinary tastes are catered for, even down to the wines, or you can choose from the wine list if that is your preference. Stefan's cheese selection is legendary and according to the season there could be between 70 and 90 regional cheeses to choose from, served with pear bread and various mustards and preserves he has made. Nature and ingredients have the starring role in Gasthof Rössli and connoisseurs are treated to the ultimate in gourmet dining.
