Fine views of the Suir estuary are just one of plus points for visitors to this elegantly restored eighteenth-century mansion, which now functions as a magnificent luxury hotel complete with highly desirable self-catering apartments and a golf club.
The main restaurant (collectively the Roseville Rooms) takes in two ornate, high-ceilinged drawing rooms and a garden conservatory with rich colours and luxurious furnishings. It's a suitably smart backdrop for cooking with a forthright modern accent.
You might begin with crispy tempura of John Dory with piquillo pepper and black olive salad or home-cured fillet of salmon with almond cr่me fra๎che and beetroot confit. Follow on with - perhaps - pan-roasted baby black sole, herbed potatoes, lamb's lettuce and pineapple salsa or roast rack of mountain lamb with dauphinoise potatoes and claret jus, before finishing with iced honey and poppy seed parfait or warm pear and apple clafoutis with caramel ice cream and rhubarb compote.
