The kitchen delivers a mixed bag of dishes ranging from standards like saddle of venison with wild mushroom and juniper to in-vogue ideas such as seared loin of tuna on a warm fennel and mooli salad with lemongrass and coriander dressing. Start with chicken liver and foie gras parfait and round things off with marbled chocolate marquise and pistachio anglaise or iced almond and nougat parfait.
