Review on Abstract
The Glenmoriston Town House is one of Scotland's top hotels, situated in a leafy quarter of Inverness with charming views of the River Ness. It's also home to Abstract, a dazzling modern restaurant which is already tipped as one of Michelin's 'rising stars'.
The regularly changing menus are shot through with impeccably sourced Scottish ingredients, all subjected to cutting-edge contemporary French treatment. West Coast langoustines are paired with garlic frogs' legs, spring cabbage and langoustine froth, Ross-shire lamb is accompanied by rhubarb jelly and Israeli couscous, while seared sea bass is given an oriental slant with Japanese bouillon, white radish and wasabi emulsion. The kitchen also makes great use of locally shot seasonal game, as in roast female duck with confit of leg, wilted carrots and wild rowan jelly sauce.
Desserts are complex assemblages which are best ordered in advance: try the carpaccio of yellow peach with rosemary granité and chilled peach soup or hot raspberry soufflé with Szechuan pepper sauce and raspberry sorbet. France leads the pack on the tantalising, but seriously priced wine list.
