Review on The Three Chimneys

The Three Chimneys, a Gold 5-Star restaurant-with-rooms occupies a remote spot far away from the madding crowd, in a tiny village close to the Colbost Folk Museum. There's a real sense of enduring domesticity about this 100-year-old converted crofter's cottage: sturdy polished tables are dotted around the two stone-walled dining rooms, Celtic music plays and the owners are forever baking breads. There are 6 wonderful bedrooms in the adjacent 'House Over-By' and it is reckoned to be one of the most romantic places to stay in the Scottish Highlands and Islands.

The kitchen under the leadership of Head Chef Scott Davies has always championed local produce and dinner menus change with the seasons featuring a four-course format that seems to suit everybody. Fresh seafood is still the main attraction, from Bracadale crab tortellini with hot red pepper crème fraîche in springtime to citrus-baked halibut with scallops, potatoes and Seville orange sauce.

First courses are always followed by a soup (cream of Jerusalem artichoke with lobster oil, for example) or a plate of Skye oysters and there's generally a good showing of top-notch meat and game – as in fillet of Aberdeen Angus beef with Puy lentils, beetroot and horseradish relish and buttery black kale, or roast saddle of wild rabbit and hare with golden pearl barley, Savoy choucroute, new-crop baby carrots and wild garlic gravy (a real taste of spring!).

The 'famous' hot marmalade pudding with Drambuie custard is seldom off the menu; otherwise finish with lemon posset or pineapple carpaccio with Kirsch granita coconut ice cream and cardamom crisp. The wine list is a fine collection of vintage stuff, with France as the main contender.
