Review on The Pheasant at Keyston
The Pheasant looks every inch the traditional village pub, with its long thatched roof, oak beams, log fire and real ales on tap. it is now owned and operated by the Hoskins family who used to run it up to 2007 and manning the stoves is Simon Cadge as Chef Patron. John Hoskins, Master of Wine also owns the award winning Old Bridge Hotel in Huntingdon, which has twice won the AA Guide award for the best wine list in the UK.
There's an easy-going feel to the place and eating here is flexible - you can drink, or graze, or sit down to a full three courses in one of the eating areas. The food is contemporary, with lots of Mediterranean influences and a strong allegiance to local produce. From the a la carte menu choose a starter of crab linguini with chilli, parsley, confit garlic and lemon oil or home cured bresaola with beetroot, watercress and horseradish. Main courses could take in free-range, corn-fed chicken with fondant potato, leeks, pancetta and sage or grilled whole lemon sole with mashed potato, spinach, crab and cockle butter. For pudding there's vanilla pannacotta with rhubarb compote and ginger or baked chocolate tart with griottine cherries and crème fraîche sorbet. You can expect an exceptional wine list from Master of Wine, John Hoskins.
