Review on One-O-One
Occupying a prime chunk of Knightsbridge real estate, the ultra-swanky Sheraton Park Hotel is home to one of the most elegant and sophisticated seafood restaurants in the capital, One-O-One. The dining room recently re-opened after a major refit and change of style: the old, rather anonymous interior has been ripped out and replaced with something 'inspired by the symmetry of a shucked oyster' and a dramatic pearl-white counter at the centre of things.
Chef Pascal Proyart hails from Brittany and has been indulging his passion for seafood at One-O-One for more than ten years. In keeping with the brand new look he has devised a new menu focusing on 'petits plats' - little grazing dishes intended for sharing. Here you will find Norwegian red king crab with sweet ginger, chilli and cuttlefish tagliatelle, pan-seared langoustine with Peking duck consommé and hoisin froth, and red tuna tartare with tempura of soft-shell crab, sushi rice and wasabi sorbet.
A few of Proyart's classic favourites such as wild sea bass baked in a crust of Brittany sea salt or tournedos of monkfish with lemon risotto, cockles and razor clams also feature, while desserts offer satisfaction in the shape of pear and chocolate mille-feuille or warm chocolate fondant with mandarin sorbet. The aristocratic wine list has strong French connections.
