Review on Greens Bistro
It's well worth the hunt to find Greens, which is hidden away in a basement among Lytham's shops and private dwellings. Pass through the wrought-iron gates and down into the cellar, where simple green and white colour schemes set the tone and tables are tucked away in nooks and crannies.
Paul Webster draws on supplies from Fylde producers and growers for a modern British menu of robust dishes ranging from rustic roast tenderloin of pork with bubble 'n' squeak, sage gravy ands Granny Smith apple purée or braised shank of Pendle lamb with parsnip mash to medallions of monkfish with crayfish risotto and hollandaise sauce or fillet of gilthead bream with rösti, leeks and Champagne sauce.
You could open your account with – say – a twice-baked soufflé of Singletons Lancashire cheese, roasted pears and walnut dressing or pheasant terrine and conclude with Amaretto crème brûlée. The globetrotting wine list provides excellent back up.
