Review on CUT at 45 Park Lane
The Dorchester Collection's 45 Park Lane opened in September 2011 in exclusive Mayfair on the former site of the Playboy club and is home to Wolfgang Puck's first venture in Europe called CUT. Located on the ground floor of the hotel, with luxurious and contemporary interiors by New York based designer Thierry Despont, featuring 16 Damien Hirst's limited-edition Psalms series displayed for the first time, CUT impresses with its stunning good looks.
CUT at 45 Park lane is the sibling to three other award winning branches located in Beverly Hills, Las Vegas and Singapore, but the Mayfair outpost will be the first to offer a breakfast and lunch menu showcasing Puck's twist on American classics. Executive chef is David McIntyre who has been with the group for 13 years working at some of Puck's fine dining restaurants including Spago, CUT and WP24.
The menu will offer contemporary interpretations of the classic American steak restaurant, featuring some of the best selection of beef available in London, as well as hand-selected beef from the United States, Australia, Chile and New Zealand. The signature cuts of beef: filet, sirloin, ribeye, rib-chop, Porterhouse, bone-in New York and bone-in filet are grilled over hard-wood and charcoal and then finished under a 1200° broiler to impart a truly unique flavour and texture. There are also fish options such as pan roasted Scottish lobster with black truffle emulsion or sautéed diver scallops served with Yuzu Kosho butter. Desserts home in on traditional British and American favourites such as baked Alaska, dark chocolate soufflé with whipped crème fraîche and banana cream pie. The food is supported by a carefully chosen wine list with some great wines from around the globe.
