Review on Hibiscus
When Claude Bosi decided to move Michelin-starred Hibiscus from gentrified Ludlow to the urban chic of Mayfair, he not only brought the name and his maverick culinary intelligence, but also many of his staff (and, of course, his other half, Claire). The setting is a rather anonymous piece of corporate W1 real estate, which has been tastefully re-jigged with oak-panelling, narrow mirrors and touches of chi-chi glamour. Well, it all paid off as Hibiscus entered the Top 50 Restaurants in the World, 2010 league at number 49 climbing to 43 in 2011.
Bosi's food has always lived on the edge, and he's happy to play the risk-taker, pulling in curious ingredients from all over: the seasons dictate what appears, but the list could include the seeds from wild alexanders, oak-smoked butter, tamarillo powder and Indonesian basil ice cream. He's also loyal to produce and suppliers from his old home patch, brining on board Wye Valley asparagus, hand-reared pork and Herefordshire snails - although fish comes moistly from Cornwall, cockles are from Brittany and kid spent its days in the Pyrenees.
A springtime starter of spring onion and lime ravioli with glazed broad beans, caramelised broad beans and mint purée typifies the style, while things get more challenging with the likes of Limousin veal kidney cooked in duck fat with Irish sea urchin cream, buckwheat and cucumber (roasted and pickled). In Ludlow, Bosi was famous for his 'savoury' desserts, and the tradition continues with, say, iced olive oil parfait, caramelised chickpeas and date purée or white asparagus cream with white chocolate and goats' cheese ice cream. The wine list is a big beast focusing on the classic French regions, but with serious input from the USA and the Antipodes.
