Review on Carton House Hotel, The Linden Tree
During its lifetime, this glorious Palladian mansion has played host to any number of auspicious guests from Queen Victoria to Grace Kelly. Following a fantastic makeover, the beautifully elegant eighteenth-century house has been transformed into a top luxury hotel: minimalist flourishes and contemporary artwork now blend with the untouched classic interior, original antiques and sparkling chandeliers.
Walnut panelling and marble floors set the tone in the classically designed Linden Tree restaurant, which enjoys unrivalled views of the hotel's vast landscaped grounds, formal gardens and championship golf course from its three massive bay windows.
Dinner might begin with fennel and potato soup with truffle-scented chive oil or a kebab of seared tiger prawns with celeriac rémoulade and red pepper foam. Main courses cast their net wide for anything from crispy confit of duck with honey-roast root vegetables and cep cappuccino to grilled fillet of cod with white bean cassoulet, baby spinach and mussels. Traditional Irish high teas are also served on Sundays, from 2.00 – 5.00pm.
