Kevin Dundon is a well-known figure on the Irish restaurant scene, with a recipe book under his belt and his own world-renowned cookery school operating at Dunbrody. The hotel itself is a luxurious 1830s Georgian country manor set in 200 acres of parkland and gardens just across the estuary from Waterford city.
The airy Harvest Room restaurant boasts splendid views of the 'pleasure garden', and is adorned with luxuriant floral displays and striking modern rugs strewn over the floor. Seasonal pickings from the organic kitchen garden find their way onto the menu, along with daily deliveries of fish from the Wexford coast and meat from a reputable butcher in the county.
Caramelised Kilmore Bay scallops with marinated fennel bulb on a mango salad or poached fillet of turbot with garden vegetables, mussels and saffron broth typify Kevin Dundon's exciting modern approach to seafood. The same creativity also spills over into other dishes, witness roast leg of rabbit stuffed with sage and morel mousse on parsnip and thyme soup or soy and honey-glazed pork belly on a galette of ham shank and leeks with a cider reduction.
