A world-class destination with sprawling leisure facilities on a grand scale, Celtic Manor Resort is set in 1400 acres of panoramic parkland in the Usk Valley. It comprises two hotels (the Resort and the original nineteenth-century Manor), a convention centre, exhibition hall, championship golf courses, spas, function rooms and a plethora of eating venues.
Epicure by Richard Davies is the new flagship restaurant offering creative menus with a focus on seasonality and premium sourced local ingredients. Diners can relax in the luxurious lounge bar before proceeding to the intimate dining room where they can enjoy the menus prepared by talented chef Davies. He has worked with some big names in the industry including Gordon Ramsey and John Campbell before achieving his own Michelin stars at the Manor House, near Bath and Sawyards in West Sussex.
Open your account with duck egg, peas and wild garlic, Iberico ham or maybe ravioli, Cornish cod, smoked eel and fennel. Inventive main courses follow with pork belly, cheek, belly, cheek, Szechuan and carrot or for fish fans there's turbot, cèpe, celeriac and pancetta. Delicious desserts close the show in the shape of brulée, popcorn, popcorn, caramel and banana or there's a selection of British and French cheeses served with homemade biscuits and preserves.
