Review on Au Trou Gascon
Au Trou Gascon is one of celebrity chef Alain Dutournier's restaurants, a short walk from Bercy and the only Michelin starred restaurant in the 12th arrondissement of Paris. This elegant establishment has retained the charming ceiling mouldings from the 1900's, but now the furniture and décor has been updated along contemporary lines.
Dutournier chose the location of this restaurant, a former coachman's cafe because of the twice weekly local market and therefore his cuisine showcases quality products from small producers. The menu honours the South West region of France, with seafood showing up well, but the traditional style has been updated and dishes show more innovation. Seasonal menus may kick off with steam cooked jumbo shrimps, foie gras flan with chestnut sauce or duck foie gras paste pie with pistachio. Moving on, choose pan-fried sea bass, cereals, seasonal mushrooms, broccoli semolina or wood pigeon fillets coated with hazelnuts, small cabbage stuffed with the legs. Finish with outstanding desserts, beautifully presented such as pistachio cream cake, mixed fruits marinated in Armagnac or roasted figs with ginger, crispy walnut biscuit and curdled ewe milk sherbet.
There is a large eclectic wine cellar with over a thousand wines to choose from together with a fabulous collection of some 100 vintage Armagnacs. Front of house is run by Alain's charming wife Nicole and although the restaurant is somewhat off the tourist track, it is certainly worth seeking out.
