Review on Yam'Tcha

This tiny restaurant called Yam'Tcha meaning drink tea, is one of the hottest tables in Paris and is located in a side street in the Les Halles district. Serving Franco-Asian cuisine it opened in March 2009 and has already been awarded a Michelin star for its owner and chef Adeline Grattard. The young chef has been mentored by such culinary greats as Henri Faugeron, Yannik Aleno, Pascal Barbot and in Hong Kong at Bo Innovation with Alvin Leung. This small rustic dining room with exposed beams and limestone, seats just 20 diners at dark wood tables with linen runners.

Adeline, who hails from Dijon, can be seen preparing her exquisite dishes in a galley-sized kitchen, just inside the door of this small restaurant. Ingredients are sourced with care and the menu changes daily to reflect the availability of market produce. She is quoted as saying, "The food I create is feminine, instinctive and spontaneous. Men's cuisine is much more precise and cerebral." The innovative cuisine with its subtle blend of flavours could feature shrimps from Mozambique with Korean mushrooms and a garlic sauce, fresh seasonal asparagus with pan-fried foie gras and mustard leaves or maybe sautéed liver from Vendée served with white asparagus from Landes. Finish with a ginger ice cream served with avocado slices and passion fruit. Her husband Chiwah Chan is the restaurant's tea steward and each course is paired with a different tea.
