Review on Le Versance

Le Versance, an elegant and modern restaurant a short distance from the Place de la Bourse is set in the second arrondissement of Paris. The first floor restaurant is a delightful mix of white and grey shades with designer furniture and a renovated period décor of exposed beams and beautiful stained glass windows while a luxurious downstairs lounge is the spot to peruse the menu while sipping a glass of champagne or an apéritif.

Chef and proprietor is globetrotting Samuel Cavagnis who earned his culinary stripes as an apprentice of Michelin starred Georges Blanc. His innovative menu could start with grilled foie gras with an artichoke emulsion and truffle oil or avocado and tomato tartare served with salad and basil vinaigrette. Other intriguing ideas could include mains such as lamb tian with cabbage fondant and beetroot purée or John Dory with vegetable tagliatelle and pea and ginger ravioli before moving on to some sensational desserts. The wine list has its share of French veterans as well as some more modern youngbloods.
