Review on Passage 53
Passage 53 is situated in Paris' oldest covered passageway, the Passage des Panaromas, between the stock exchange and the Musée Grévin. Serving French nouvelle cuisine the restaurant only opened in April 2009 and is already the recipient of a Michelin star. With floor to ceiling glass windows and pale walls, the restaurant has a light and airy feel. It is an interesting mix of old and new with low ceilings of wooden beams, ornate floor tiles and modern white leather lounge style chairs.
The first floor kitchen reached via a 1798 spiral staircase, listed as an historical monument, is where the Japanese chef Shinichi Sato works his magic. Sato climbed the culinary ladder at some very prestigious locations, Tokyo Grand Hotel, Mugaritz in San Sebastian and three starred Michelin L'Astrance where he developed his cooking style with chef Pascal Barbot. The manager and part owner is Guillaume Guedj who is the son-in-law of renowned butcher Hugo Desnoyer, supplier of meat to some top-notch Parisian restaurants. So as well as the meat, other products are sourced with care, the butter is Bordier, the oysters Gillardeau, and the vegetables from Joël Thibault.
From Sato's menu with its modern inventive dishes with Japanese influences, you could start with an amuse bouche of pea velouté with pea ice cream and onion tart and herring roe sandwich, followed by starters of carpaccio of daurade or tempura baby violet artichokes with green apples, oysters and a sea onion foam or the house's signature dish of grilled squid and cauliflower. Mains follow the theme with saddle of rabbit cooked sous-vide and presented with a civet of the meat in a dark chocolate sauce or roast pigeon breast with fondant potatoes, fine beans, choi sim, broad beans, bread sauce and smoked aubergine purée. While desserts tempt with the likes of lemon and verbena sorbet accompanied by diced grapefruit, lychee and bergamot, tarte tatin with vanilla ice cream and toffee apple or lychee pannacotta with strawberries.
Service is friendly and efficient and there is an excellent wine list with several offerings by the glass, together with a selection of Champagnes and Burgundies.
