Le Pergolèse, a Michelin starred restaurant residing in the heart of the 16th arrondissment of Paris is owned by husband and wife team Stéphane and Chantal Gaborieau and Stéphane mans the stoves while Chantal graciously looks after front of house. The elegant modern dining room is decorated in yellow tones, with wood panelling together with rich red banquettes and it exudes a warm and welcoming ambience.
In 2004 Stéphane Gaborieau was awarded the title 'Meilleur Ouvrier de France', Best Chef of France and he has created a dazzling traditional cuisine with inventive touches which will be sure to delight. Ingredients are sourced with care and menus are updated frequently in accordance with the market. Among the starters look for prawns stuffed with coarsely chopped mushrooms with light lobster and foie gras sauce or how about half a Brittany lobster with Greek vermicelli, chequered young leeks and truffle flavoured parsley vinaigrette. Main courses usher in Scottish salmon cooked on one side, velvety oyster sauce with nuts and small hibiscus flavoured chicory or skilled grilled Aubrac beef medallions, ox cheek in pomponette, petit four of root celery and beef gravy with séchuan. As a finale indulge in hot soufflé of caramelized pears, peppery pear sorbet and calvados soup or an exotic fruit ravioli with thin slices of pineapple and passion fruit syrup.
