Review on Restaurant Fogón
Restaurant Fogón, meaning the kitchen stoves, is a modern restaurant located on the Left Bank of the Seine serving Spanish tapas. Chef and owner is Michelin starred Alberto Herráiz who descends from four generations of chefs from the Castilla la Mancha region of Spain. The spacious dining room has a trendy and contemporary feel with its dark wood décor, white leather chairs and a large Iberian cured ham turning in a temperature controlled cabinet. Alberto designed the ultra-modern tables with their secret compartment that holds the cutlery and they are simply laid with pretty rice candles.
Herráiz marries the best of Spain's gastronomic tradition with the very latest cooking techniques to produce creative and playful combinations of sophisticated tapas for a menu that changes monthly. Some of the dishes that might appear could be soft shell crab with lime and avocado, pea and mint ravioli, flan of rascasse fish and basil cream or an inventive sardine meillefueille. The menu also features six paella-cooked rice dishes as well as a rice dish of the day, prepared according to what is available at the market. You may taste them ŕ la carte, or with the rice selection which starts off with a few tapas, followed by your choice of rice and a dissert. The rice is prepared for at least two people and you could choose a Valencian-style rice in black cuttlefish ink. Desserts continue to surprise with a Piquillo pepper strawberry sorbet with crushed croutons. The atmosphere is relaxed and there is a short wine list and home made Sangria to compliment the cuisine.
