Review on Epicure
Epicure is the gourmet restaurant of the luxurious Le Bristol hotel located on the rue du Faubourg Saint Honoré, famous for its upmarket boutiques and art galleries, and is one of the elite few to be awarded three Michelin stars. Since 1999 Eric Fréchon is the very talented chef who holds sway here with his pitch-perfect cuisine. He was awarded the Ouvrier de France title at just 36 years old and has worked at illustrious kitchens such as Taillevent, Tour d'Agent and Les Ambassadeurs at Hotel du Crillon.
Epicure was originally the summer restaurant located next to the wonderful French styled garden, but it was transformed in 2011 by Architect Pierre-Yves Rochon, in collaboration with Mrs Maja Oetker. The dining room exudes understated luxury, presented in a palette of warm neutrals, with large picture windows to take in the views.
Eric Fréchon's menu proposes exceptional innovative cuisine, where ingredients are sourced with care to produce dishes that marry flavour and colour in perfect harmony. Open your account with duck foie gras cooked in a wrap, smoked oyster from Normandy and green tea broth or frogs' legs sautéed in a meunière style with tandoori spices and sliced fried onion. Follow on with main courses such as saddle of venison roasted with juniper berries, beetroot perfumed with Porto, puréed celeriac, and a 'Grand Veneur' sauce or blue lobster roasted with rosemary , turnip cooked with orange juice, warm broth brewed with ginger and coriander. Desserts from Laurent Jeannin are equally inviting ideas with Guanaja chocolate cake, crispy shortbread biscuit, roasted hazelnuts, ice cream of infused coffee, emulsion of caramel mixed with spices or maybe Brazil nut caramelised, delicately wrapped with praline and very light milk mousse. With impeccable service and attention to detail and a stellar wine list where sommelier Marco Pelletier highlights independently grown wines each month, dining here is a very memorable experience.
