Lakeland produce really is top of the agenda at the Westmorland Hotel: the owners not only support their local network, but have also set up an award-winning 'Farm Shops' complex five minutes' stroll down the road. The kitchen doesn't need to look far for culinary inspiration: meat comes from the director's farm, local dairies provide top-flight cheeses and there is excellent oak-smoked fish from Brougham Hall.
The result is a menu that might include fillet of Cumbrian pork and black pudding with pear and thyme tarte Tatin, loin of Lakeland lamb with hotpot potatoes and a vegetable stock reduction or suprême of pheasant and ceps with bubble 'n' squeak and cranberry compote.
