Meals are served throughout the year in the stylish Bay Restaurant, with its polished granite tables and ever-changing art exhibitions. Fish from Newlyn shows up strongly on the seasonal menus: grilled fillets of line-caught mackerel are served with king prawns, pancetta and Puy lentils, while smoked, paprika-tossed sea bass might appear with garlicky cannellini bean purée and saffron velouté.
Local produce is also used across the board for, say, game terrine with rowan berry jelly, pan-fried fillet of Cornish beef with black truffle crushed potatoes and tarragon hollandaise, and puddings like winter fruits glazed with Kirsch and almond sauce.
During the summer, you can also get café-style lunches and early-evening meals along the lines of pork and herb sausages with garlic crushed potatoes and red wine jus, pasta with fennel and black olive tapenade, steamed mussels and plates of Cornish cheese, as well as desserts such as whisky and banana crème brûlée.
