In a charming Sussex village within easy reach of the M23 and Gatwick Airport, Ghyll Manor is a pretty-as-a-picture sixteenth-century mansion set in 40 acres of grounds. No wonder it's a popular venue for weddings and conferences.
The airy conservatory and terrace overlooking the lake are perfect for pre-prandial drinks, and the dining room – in the old part of the building – oozes atmosphere with its fine oak beams and antiques. Refined modern European food is the kitchen's forte, and a typical meal might run as follows: pan-fried foie gras with braised pork belly, ginger and pistachio jus; seared wild sea bass with buttered baby fennel, lobster ravioli and lobster essence; and rhubarb with vanilla chestnut purée, glazed filo and marjoram ice cream. Alternatively, sample the delights of the 'pure tasting' dégustation menu – a six-course extravaganza spanning the kitchen's full repertoire.
