The Tamil word kari (dip) is purported to be the origin of the word curry. The word is frequently used to describe all Indian dishes, and sometimes for dishes that are made with a particular sauce. But the Indian curry should not be confused with the mixture of spices with which we in Europe are familiar. It is more a mixture of different spices that taste different every time depending upon one's own personal preferences. Every housewife and every cook prepares his or her own curry spice mixture, the ingredients of which are guarded jealously.
