Review on Morgans Hotel

Housed in the building that was once used by the Port Authority for administering Swansea's thriving maritime trade, Morgan's is now an unashamedly up-to-the-minute five star hotel with all mod cons, but still swathed in history.

The restaurant occupies the original boardroom on the first-floor and old seafaring murals still hang on the walls. Meals could kick off with warm salmon and asparagus salad with sauce vierge or duck spring rolls with hoisin and plum glaze before pan-fried loin of wild boar with raspberry and mustard seed jus, fillet of Welsh beef, or grilled local wild sea bass with bell pepper mash and balsamic pesto. Finish with raspberry and clotted cream brûlée or a quirky deep-fried apple and berry sandwich.
