Hotel du Vin & Bistro in the heart of Winchester is the original outlet of this steadily growing group. It's also the smallest of the bunch, located in an auspicious Georgian townhouse dating back to 1715.
The philosophy is simple: provide straightforward bistro cooking at sensible prices based around fresh local ingredients and back it up with stylish accommodation and a gold-standard wine list offering a vast and eclectic choice including an impressive array by the glass.
Polished floors and antique, leather-upholstered chairs set the tone in the cosy dining room, and there's also the bonus of a Champagne bar and pretty walled garden for fine-weather days.
'Simple classics' such as Morecambe Bay potted shrimps, char-grilled ribeye steak with frites and veal saltimbocca give way to more contemporary ideas including – for example – seared scallops with roasted celeriac purée and gremolata, roast rump of lamb with wilted spinach and tapenade jus, or confit of salmon with white asparagus and aïoli followed by desserts such as summer pudding or dark chocolate galette with roasted hazelnuts.
