Review on The Rybeck Country House & Restaurant
A neatly extended Victorian gentleman's residence is the setting for this luxury hotel in five acres of grounds overlooking the delights of Lake Windermere. The aptly named Terrace Restaurant has impressive views over the terrace and the gardens, and it provides a formal setting for dinner in the country house mode.
The menu changes each day, and it's a fixed-price, five-course affair built around carefully sourced Lakeland ingredients. To begin, there might be steamed asparagus with marinated Stumpy goats' cheese and hollandaise or venison terrine with plum chutney, while main courses could take in roast rack of Kentmere lamb with red wine and rosemary jus or pan-fried suprême of Pooley Bridge chicken with wild mushroom risotto, mustard and honey sauce. The 100-bin wine list is a well-chosen slate from Frank Stainton wine merchants of Kendal, who also host regular wine weekends at the hotel.
