Mobile Food Guide Review of Three HorseshoesMadingley is a photogenic little village a couple of miles outside Cambridge, and its focal point is the Three Horseshoes - a demure sixteenth-century thatched inn with a pretty garden and a reputation for serious food and wine. Easy-going sociability is the hallmark of the place, one menu is served throughout, and you can eat in the bar, the luxuriant conservatory dining room or outside (weather permitting). You're not even obliged to have the full three courses. Formerly part of Huntsbridge Group, the Three Horseshoes is now owned and run by its long-serving chef Richard Stokes. He has honed his skills and liking for assertive Mediterranean flavours over the years, and his ever-changing repertoire looks to Italy for most of its inspiration. Many ideas are complex assemblages - as in insalata con granchio (Portland crab salad with marinated green and yellow courgettes, chilli, parsley, dill, lemon and Selvapiana '05 olive oil) or manzo alla griglia (aged Aberdeenshire beef with char-grilled asparagus, warm anchovy and rosemary butter, potato and Fontina cake). Italy and England often rub shoulders on the cheeseboard, and the choice of desserts might include raspberry and almond tart or hot chocolate fondant with pistachio ice cream. The wine list is a real dazzler, thanks to Huntsbridge supremo John Hoskins MW: it oozes quality at every turn, although Italy is the real star.
