The hotel's gastronomic flagship is the Phileas Fogg Restaurant, which boasts panoramic runway views of Manchester's self-styled 'Gateway to the World'. As befits the name, the food is suitably globetrotting, with complex ideas and many items flagged as 'low carb', 'low fat' and so on.
Typical starters might include carpaccio of venison, rocket, Parmesan and pickled shallots or seared scallops with gazpacho dressing, pea coulis and crispy Parma ham. A soup such as shellfish bisque comes next, before main courses of roast rack of lamb with confit of shoulder fondant potato and balsamic jus or steamed fillet of halibut paired with braised oxtail, pea fricassee, roast salsify and red wine sauce. Finish with an intriguing dessert such as bitter chocolate semifreddo with white chocolate brownie and green Chartreuse syrup.
