Situated on the sheltered shore of Busta Voe, close to the geographical centre of Shetland, this secluded hotel is etched with history and makes a fascinating place to stay and enjoy the island.
Sampling fresh Shetland produce is part of the experience: the kitchen lays its hands on prime hill lamb, free-range pork, cheeses and a net full of fresh seafood from around the islands. Butter, milk and ice creams are produced locally, and Busta House has recently linked up with a producer of organically farmed cod in Vidlin (a world first).
You can taste it all in the Pitcairn Room, where the menu offers delights such as chicken liver pâté with sweet Cumberland sauce, poached sea trout with fresh pesto, and Orkney Gold sirloin steak with whisky and black peppercorn sauce – not forgetting haggis with clapshot and mash or desserts like peanut fudge cheesecake.
The Busta Lounge menu is also worth a look, if you like marinated herring fillets, lamb with fresh thyme and garlic cream, pork in Stilton and walnut sauce or apple and pear crumble.
