Superlatives come easily when talking about this instantly alluring and enchanting Elizabethan manor house set in 1,000 acres of awe-inspiring grounds. Be prepared to be seduced by its elegant charms. For 50 years, Gravetye Manor was home to William Robinson, the Victorian godfather of 'natural gardening' and famed for his bible 'The Wild Garden'. The results of his labours have been meticulously preserved for all to see: stroll around the grounds and marvel.
Long-serving custodian Peter Herbert handed over the mantle to general manager Andrew Russell and chef Mark Raffan in 2004. It has been a seamless transition, judging by the accolades that continue to come Gravetye's way. Mark Raffan has been at the stoves for more than a decade and his cooking has lost none of its edge.
Local supplies and pickings from the restored kitchen garden are married with global ingredients, and Raffan applies the Midas touch. New season's asparagus with Gravetye's home-smoked salmon, hollandaise and creamy asparagus soup or loin of organic veal with morels, saffron pasta and creamy Madeira sauce have seasonality written all over them, while spicy honey-roast duck breast with a spring roll, palm hearts and Szechuan sauce goes all-out for oriental wizardry. As for desserts, consider hot mango soufflé or iced banana and pistachio parfait with warm chocolate fondant and local double cream.
The Gravetye Manor wine cellar is one of the most aristocratic and majestic in the land. There is good breeding and glorious drinking at every turn, whether you are looking for a classic vintage or a sprightly newcomer.
