Inside, it full of perfectly proportioned rooms with high ceilings, elaborate cornices and arched Gothic windows. The renowned Ardmore Restaurant has built up a reputation for sound modern cooking and impeccable service. Locally farmed beef, mountain lamb and daily deliveries of fresh fish form the backbone of the seasonal menus, and there's no doubting the 'Irishness' of the dishes on offer. Hand-dived Rathmullan scallops and Mulroy Bay mussels might come with saffron and tomato sauce, loin of Finnebrogue Estate venison could be partnered by confit of cabbage, roast celeriac, a handmade sausage and roast beetroot jus, while Castlerock lamb often appears stuffed with spinach, lemon and thyme.
