The kitchen makes bountiful use of the day's haul for some lively European-influenced dishes, including wild halibut with roast tomatoes, thyme and garlic butter, simply cooked lobster and seared scallops with lemon, garlic and balsamic vinegar.
Elsewhere on the handwritten menus you might see New Forest roe deer with bubble 'n' squeak or even bison steaks, while desserts could usher in – say – chocolate truffle cake or ginger ice cream with cranberry sauce.
