Situated in Kemp Town 'village', between Brighton Pier and the Marina, Sam's occupies the site that once traded as One Paston Place. Chef/proprietor Sam Metcalfe is well-known for his endeavours at Sevendials Restaurant, and his new venture aims to capitalise on his feel for seasonal, bistro-style food in relaxed surroundings (complete with fresh flowers and family photos).
The menu is refreshingly unpretentious, ingredients are locally sourced and the regular repertoire is bolstered by a slate of blackboard specials (how about steak and kidney pie with mash, cabbage and a pint of Bass for a tenner?). Among the dishes on offer might be confit duck and smoked ham terrine with red onion marmalade, rump of Sussex lamb with spiced aubergine salad and coriander yoghurt, and escalope of salmon with grilled cherry tomatoes, spinach and hollandaise.
To round things off there are unshowy desserts such as treacle tart with strawberry ice cream or chocolate and Amaretto fudge pot, while the carefully chosen, contemporary wine list includes a fistful of great-value house recommendations plus some real 'stand-out' bottles for special occasions. Sam's of Brighton is also a perfect neighbourhood haunt for lazy weekend brunches, business meetings and family celebrations.
