Once an old coaching inn on the road from London to Southampton, Clos du Marquis now offers a taste of rustic France at Stockbridge, in the heart of the Test Valley. Germain and Glanis Marquis run the place rather like a French auberge, with beams in the dining rooms, a gazebo for al fresco meals and a menu that oozes big-hearted traditional flavours. The whole place radiates charm and family bonhomie.
Traditional cassoulet ('à ma façon') is the revered speciality of the house, along with New Forest venison in season and a fashionable newcomer in the guise of 'foie gras de la mer' (made from monkfish liver). Germain also produces a fine selection of rustic dishes including salad of pigeon breast and broad beans with hazelnut dressing, loin of Limousin veal with chestnut purée and truffle-scented sauce, and slow-cooked loin of Pyrénean Black Pig with prunes, as well as a masterly turbot soufflé. Wash it all down with something punchy from the list of French regional wines.
