Billed as a 'lavish urban spa', 'global boutique' and über-hip, frighteningly trendy destination for glamorous and moneyed doyens of the celeb culture, the Sanderson with Suka at Sanderson is not a place to be taken lightly. It's a cocooned world of fantasy and surreal interiors complete with a lushly landscaped interior courtyard garden, a billiard room and all manner of bespoke facilities.
Suka inhabits the space formerly occupied by Spoon at the far end of the hotel's fabled, high-decibel Long Bar. Diners sit at cool, sleek tables beneath dangling Phillipe Starck lamps, and there is space in the courtyard when the weather is clement. What emanates from the kitchen is a mix of traditional and new-wave Malaysian food interpreted by high-flying New Yorker Zak Pellacio and his team.
Some of the prices may look pretty scary, but there is some stunningly good food to be had here. Try the oven-blasted pork belly with five spice and black vinaigrette, wok-fried three-pepper pomfret or foie gras with a vibrant salad of mangosteens, Vietnamese mint, red onion and Thai basil. Added to this are Malay classics including beef rendang, green papaya salad, nasi goreng and hokkein mee noodles plus some mind-blowing desserts such as roast pineapple pangang with pineapple and chilli sorbet, ginger sauce and a tapioca shot. Refresh with one of the 'flowering teas' and tread carefully through the financially explosive wine list.
