Opened in 1984, Derek Tang's restaurant is new one of the swishest Chinese eating places in the heart of Edinburgh 'new town'. The kitchen deals mainly in classic Cantonese regional cuisine, with seafood as a major player on the lengthy menu.
Specialities worth noting include lobster with ginger and spring onions, steamed turbot with black bean sauce, wok-fried monkfish slices with broccoli, and salted, spiced squid stuffed with prawn paste. Alternatively, check out the crispy barbecued pork, 'eight treasures' braised duck, and beef with ho-fan noodles.
Derek Tang has put together an impressive wine list that spans the globe from France to China; in 1997 he also opened the Noble Grape - Scotland's first Chinese wine shop and importers.
