Right in the heart of Edinburgh's Old Town, with 'jealousy-inducing' views of the Castle, the Apex City Hotel is a decidedly contemporary destination for business people and tourists, and has the bonus of inviting dining possibilities.
The bistro-style Agua Restaurant is decked out with swathes of marble, wood and a smattering of contemporary artworks on the walls. The kitchen follows the modern path for a menu that might open with confit guinea fowl, bacon and cabbage terrine or bouillabaisse, ahead of rump of lamb with celeriac purée and rosemary emulsion or braised belly pork pork with prawn tails with Madeira and shallot reduction. 'Cheeses of Scotland' make a good finale if you are drawn by kumquat brioche pudding with mango sorbet and orange water pannacotta.
Agua also has its own dedicated Crustacean & Seafood Bar offering oysters, mixed platters and all manner of fishy delights. A snack menu is available right through the day, or you can pick and choose as part of a full meal in the restaurant.
