The Butcher's Arms is an award winning pub in the picturesque village of Hepworth, located between Holmfirth and Penistone. This Grade II listed building has been owned since 2008 by one of BBC2's Great British Menu chefs Tim Bilton, and he has made it one of Yorkshire's most popular gastro pubs. Bilton climbed the culinary ladder at establishments such as Le Manoir aux Quat Saisons, in Oxfordshire, under the legendary Raymond Blanc. There is a rustic ambience to the dining room with its mismatched wooden tables and chairs, cosy leather sofas in front of the large crackling fire and during the summer months you can unwind on the decked terrace amidst the leafy garden.
On the food front Tim sources his ingredients within a 75 mile radius, but much is gathered closer to home, from local farms as well as supplies from villagers own gardens and allotments. Typical starters on his menu could be Whitby crab and pan seared scallops served with avocado and baby leaf salad or pressed York ham terrine with crackling, crisp apple salad with calvados reduction, melba toast and his Gran's piccalilli. Main courses follow the theme and take in Hepworth lamb, braised neck, slow roast rosemary marinated breast, pan seared rump and baked faggot encased in rich butter puff pastry or pan seared Cornish sea bass fillets, summer pea puree, fricassee of broad beans and asparagus, crispy bacon lardons and buttered potato gnocchi. Desserts provide an enticing mix of flavours, witness a classic vanilla creme brulee paired with homemade scones and Pimms jelly or maybe chocolate and beetroot brownie with beetroot ice cream.
The Butcher's Arms has won the Pub/Restaurant Chef category in the coveted Craft Guild of Chefs Awards 2011, which honour the crème de la crème of British cooking talent, regarded as the 'Oscars' of the restaurant industry.
