Review on Fera at Claridges

Michelin-starred L'Enclume chef Simon Rogan has opened his latest gastronomic venture called Fera situated in the iconic Claridges hotel, synonymous with luxurious living, big reputations and royalty. The restaurant takes its name from the Latin word meaning wild and is a reference to the primal influence of nature and the ingredients used by Rogan, well known for his passion for foraging and farming.

The space occupied for twelve years by Gordon Ramsey until its closure in 2013 has undergone a makeover by British interior designer Guy Oliver, who has worked with the hotel on a number of projects since 1996. Decked out in a soft palette of green and taupe in Art Deco style, the glamorous space features murals painted by American artist Linn Meyers and a life-style bronze tree sculpture by Bill Woodrow. The nature theme continues with views though the windows of the meadow, created by award-winning gardener Tom Stuart-Smith, it showcases the herbs and flowers that will be used in Rogan's dishes.

The state-of-the-art semi open kitchen costing £750,000 offers three menus, an a la carte, a 10 course and 16 course tasting menus with some of the produce sourced from Rogan's 12 acre farm in Cartmel Valley. Together with his Head Chef Dan Cox, Rogan produces elegant dishes that are inventive and full of exciting flavours, witness raw beef and smoked broccoli cream, scallop roe and acidic apple juice or prawns from Gairloch, parsnips with meadowsweet chard leaves and violet flowers amongst the starters. Main courses usher in from the sea, brill braised in whey flavoured with alexander seeds, blewitts, whelks and sea asters or from the land there's middle white pork jowl, warm herb sabayon, white purple sprouting and mead reduction. To finish, enjoy luscious offerings in the shape of baked yoghurt, pear poached in verjus, mountain mint and muscovado or beetroot cake, sea buckthorn curd, licorice and buttermilk and the 800-bin wine list provides plenty of high-class drinking from established growers. Fera was awarded a Michelin star in the 2015 edition of the Guide.
