Review on Kitchen Table at Bubbledogs
Tucked away behind leather curtains to the rear of the lively Bubbledogs restaurant serving gourmet hot dogs and champagne, is the Kitchens Table, seating just nineteen diners it is one of the most sought after locations in town. Both restaurants are operated by husband and wife team chef James Knappett and the very charming Sandia Chang, who is the sommelier. They have both worked their way through several top kitchens, most notably Per Se where they met, as well as stints with Marcus Wareing and Rene Redzepi's Noma in Copenhagen.
The Kitchen's Table has two sittings, with guests seated on leather swivel chairs around a U-shaped counter, overlooking the theatre of the bespoke open kitchen. Menus of between 12 and 14 courses change daily, according to the highest quality seasonal produce available that morning and are described by a single noun representing the main ingredients of the dish. Culinary intelligence and diversity, breathtaking flavours and brilliant compositions has seen the restaurant awarded two prestigious Michelin stars. Typical offerings on the carte include dishes such as chicken, chicken skin with crispy skin, rosemary mascarpone, bacon jam, or asparagus truffle, blanched and served in hollandaise, orange zest and summer truffle and desserts in the shape of raspberry, Elderflower ice cream, frozen olive oil dots and raspberry sauce.
To accompany the exquisite dishes, Sandia has compiled an impressive list of wine, together with a wide list of grower champagnes.
